A gravity turn is execute as the craft rises from the surface. It starts with pointing upwards and slowly turn till it's pointing sideways. It can also be performed backwards to land on a surface from a orbit. This maneuver is required to gain orbital velocity required to orbit a body without colliding with the surface.
